Week 2- Menu planning and meal prep

Last week while reading a blog I follow I came across an advertisement for another blog where the lady provides you with 5 meals and how to prepare them in 1 hour. Basically what I was trying to do last week- but of course someone beat me to it. Each week she emails you a categorized shopping list, all the tools you will need to prepare all 5 meals, (including ziplock bags and containers), and the recipes!

Sound too good to be true?? Yes, because it is... It costs $$$. Not much, but with a little planning I feel like I could do that myself for FREE!

With that being said here is my menu for this week:

Monday- Slow cooker honey sesame chicken- served over rice with broccoli.
5 frozen chicken breasts
3⁄4 C. honey
1⁄4 C. light soy sauce
1⁄2 C. frozen chopped onion
1⁄4 C. ketchup
2 t minced garlic
2 t olive oil
Mix and cook on low for 6-7 hours, the last 15 min add-4 t cornstarch 6 T water (pre mix before adding). Prepare rice and steam broccoli and serve chicken on top.

Tuesday- mini ham and cheese quinoa bites, and corn on the cob. I made them in my mini- muffin pan and they did not come out very easily. I should have just baked this one in a 9x13 pan.

2 cups cooked quinoa (about 3/4 cup uncooked)
2 eggs
2 egg whites
1 cup zucchini, shredded
1 cup shredded sharp cheddar cheese
1/2 cup diced ham
1/4 cup parsley, chopped
2 Tablespoons parmesan cheese
2 green onions, sliced
salt & pepper

Mix everything together and bake in mini muffin pan for 20 min at 350 until edges are brown.

Wednesday- crispy pork chops and Brussels sprouts.

4-6 pork loin chops
1⁄4 C. Dijon mustard
1 1⁄2 C. panko bread crumbs

Brush both sides of each chop with mustard and dip in panko crumbs. Bake 20-25 min at 425. Steam brussels sprouts, mix with olive oil and Parmesan to taste.

Thursday- leftovers

Friday- BBQ turkey burgers and steamed veges. No recipe here... Burgers come pre-packaged. Prepare how you would like.

And finally- just for fun... We made apple pie from hand picked apples- BEST Apple pie we have ever made!

6 apples cored and slices
3/4 cup sugar
1 tsp cinnamon
1 TBSP butter- melted
1 prepared pie crust ( top and bottom)

Put pie crust in bottom of pan- mix cinnamon and sugar, coat apples with mixture, pour coated apples in crust (with all the extra sugar) pour butter on top, add final pie crust. Poke holes for pie to vent. Bake 10 min at 425, then 30 more at 350. Serve warm with ice cream! YUMMO!!
